Paprika potatoes with hot sauce

An established dish converted to shelf-stable ingredients. Every substitution is documented below.

How long it keeps

About 6 months, set by Hot sauce.

Indicative, for planning a build before you buy. The answer for a pack you already own is the best before date printed on it, and that only holds if it has been stored as the label says.

Ingredients

The crust is the entire dish. Everything below is in service of getting one.

  1. Drain the potatoes and dry them properly. Wet potatoes steam and never brown. A cloth and two minutes is not optional here.
  2. Crush each one flat with the back of a spoon so it has two broad faces.
  3. Oil, properly hot, potatoes in a single layer. Six minutes without moving them. Then turn once, four more.
  4. Out of the pan. Same pan: garlic granules and paprika thirty seconds, passata, hot sauce, salt, vinegar. Three minutes until it thickens.
  5. Sauce over the potatoes, not the other way round, and eaten immediately.

Putting the potatoes back into the sauce undoes the crust you spent fifteen minutes building. Sauce underneath or over the top, served straight away.

Serves 3 as a side, two as a meal.

What this was adapted from

Patatas bravas: the Spanish dish of fried potatoes under a smoky, spiced tomato sauce

  • raw potatoes, parboiled then deep fried → tinned new potatoes, crushed and pan-fried

Deep frying is not happening on one burner with a finite gas canister. Crushed and fried hard in a shallow pan they take a genuine crust on the flat faces, which is most of what the dish is about.

  • a cooked bravas sauce with stock and flour → passata with smoked paprika and hot sauce

The traditional sauce is thickened and simmered. This is faster and sharper, and hot sauce supplies the heat that pimenton picante would in Spain.
