Sardine and toasted crumb pasta

An established dish converted to shelf-stable ingredients. Every substitution is documented below.

How long it keeps

About 6 months, set by Raisins.

Indicative, for planning a build before you buy. The answer for a pack you already own is the best before date printed on it, and that only holds if it has been stored as the label says.

Ingredients

Sweet, salty, oily and crunchy in the same forkful, which is a Sicilian idea and a very good one.

Do the crumbs first, in the dry pan, before anything else goes in it. Crush the crackers to coarse rubble in your hand, toast them with the almonds over medium heat for two or three minutes until they smell nutty, then tip them out. They burn the moment you stop paying attention.

  1. Crumbs and almonds toasted, out of the pan.
  2. Pasta on, water properly salted.
  3. Same pan: oil, dried onion for two minutes, chilli and raisins for one more: the raisins plump slightly and go jammy.
  4. Sardines in with their tomato sauce, broken up with the spoon. Two minutes, no more; they are already cooked.
  5. Drained pasta in with a splash of its water, lemon juice, turned through.
  6. Crumbs over the top at the table, not stirred in: stirred in they go soft within a minute.

What this was adapted from

Pasta con le sarde: the Sicilian sardine pasta, and its pangrattato crumb topping

  • fresh sardines, wild fennel and saffron → tinned sardines in tomato sauce and mixed herbs

The Sicilian original is a fresh-fish dish built on wild fennel, which has no substitute at all. This keeps the structure -- oily fish, sweetness from raisins, crunch from crumbs -- and is honestly a different dish rather than a reconstruction.

  • fresh breadcrumbs fried in oil → crushed cream crackers toasted dry

Pangrattato is stale bread, and there is no bread. Crushed crackers toast to the same purpose in a dry pan in two minutes: crunch against soft pasta, which is the entire function.
