Spiced rice with lentils and raisins

An established dish converted to shelf-stable ingredients. Every substitution is documented below.

How long it keeps

About 6 months, set by Raisins.

Indicative, for planning a build before you buy. The answer for a pack you already own is the best before date printed on it, and that only holds if it has been stored as the label says.

Ingredients

Sweet spices with rice and pulses is standard across Persia and the Levant, and reads as strange only to people who have not eaten it. The cinnamon is not making a pudding; it is making the cumin taste warmer.

  1. Rinse the lentils. Into the pan with 700 ml of water, simmer 15 minutes until nearly tender.
  2. Rinse the rice. Add it with another 300 ml of water, the turmeric and the salt. Boil, lid on, lowest heat, 12 minutes without lifting the lid.
  3. Off the heat, lid on, 10 minutes to steam.
  4. Meanwhile heat the oil hard in a mug. Dried onion until deep gold: about 90 seconds, and it goes from gold to burnt fast. Cumin and cinnamon for the last ten seconds, raisins off the heat so they plump in the residual warmth.
  5. Fork the rice through and tip the onion, spices, raisins and all the oil over.

Cook this to the meal. Rice is the one thing here that should not be kept without a fridge, the rice page explains why reheating does not rescue it.

What this was adapted from

Persian-style sweet-spiced rice, simplified to one pan

  • saffron, barberries and butter → turmeric, raisins and olive oil

Saffron and barberries are the signature of the original and neither is a store-cupboard item. Turmeric gives the colour without the perfume and raisins give sweetness without the sourness barberries bring -- so it is a rounder, less bright dish that does not pretend to be the real thing.
