A watercolour of a blistered flatbread with golden syrup running across it

Fried flatbread with golden syrup

How long it keeps

About 6 months, set by Plain flour.

Indicative, for planning a build before you buy. The answer for a pack you already own is the best before date printed on it, and that only holds if it has been stored as the label says.

Ingredients

Flour, water, salt, oil and syrup. Five things, four of which keep indefinitely, and a pudding at the end of a day when there is nothing else.

  1. Flour, salt and about 120 ml of water worked into a soft dough. Knead a minute. Rest ten if you can.
  2. Divide in four and roll or press each as thin as you can get it.
  3. Hot pan, a film of oil. 90 seconds a side, until blistered and patched dark brown. Fried rather than dry: that is what makes this pudding rather than bread.
  4. Straight onto a plate, golden syrup over while hot, cinnamon dusted on.

The syrup should hit the bread while it is hot enough to thin it so it runs into the blisters. Cold bread and cold syrup sit on top of each other.

Serves 2. Eat immediately; they go leathery within about ten minutes.
