Dates and toasted coconut in warm milk

An established dish converted to shelf-stable ingredients. Every substitution is documented below.

How long it keeps

About 6 months, set by Dates (dried, pitted).

Indicative, for planning a build before you buy. The answer for a pack you already own is the best before date printed on it, and that only holds if it has been stored as the label says.

Ingredients

Three ingredients and eight minutes, and it tastes like something considerably more considered.

Toast the coconut first. Dry pan, two minutes, moving constantly, until it goes from white to patchy gold and smells nutty. Untoasted desiccated coconut is texture without flavour; toasted it is the best thing in the bowl.

  1. Coconut toasted, tipped out.
  2. Chopped dates and the evaporated milk into the pan with the cinnamon and salt.
  3. Bare simmer, five minutes, stirring. The dates soften and start dissolving, which sweetens and thickens the milk at once. Do not boil it.
  4. Into bowls, toasted coconut over.

No added sugar at all: the dates do it, and they bring a caramel depth sugar does not.

What this was adapted from

Middle Eastern and South Asian milk puddings finished with dates and nuts

  • full-fat milk simmered down for an hour → evaporated milk, which is already reduced

Milk puddings of this kind get their body by simmering milk until it thickens, which is an hour of fuel. Evaporated milk is milk that has already had that done to it industrially -- five minutes instead, at the cost of a slightly cooked flavour the long method would not have.
