Tuna and gherkin wraps

An established dish converted to shelf-stable ingredients. Every substitution is documented below.

How long it keeps

About 3 months, set by Tortilla wraps (long-life).

Indicative, for planning a build before you buy. The answer for a pack you already own is the best before date printed on it, and that only holds if it has been stored as the label says.

Ingredients

The dressing is the whole thing, and it is made in the bottom of the bowl before the tuna goes anywhere near it.

Mustard first. Whisk the mustard with the lemon juice, then trickle the oil in while stirring. English mustard is a real emulsifier, so what you get is a thick dressing rather than oil sliding off tuna.

  1. Mustard, lemon and pepper in the bowl. Oil in slowly, stirring, until it thickens.
  2. Drained tuna and sweetcorn folded through, fold rather than stir, so the tuna stays in flakes rather than turning to paste.
  3. Chopped gherkins in last.
  4. Spoon down the middle of a wrap, fold the bottom up, then the sides.

Folding the bottom first is the difference between lunch and lunch on your trousers.

What this was adapted from

Tuna mayonnaise sandwich, rebuilt without the mayonnaise

  • mayonnaise → olive oil, mustard and lemon juice

A jar of mayonnaise is safe at ambient once opened, which surprises most people, so that is not the reason. The reason is that FoodKeeper gives it three months unopened against years for a bottle of oil and a tube of mustard, and it is 400 g of jar to carry for one sandwich. Oil, mustard and acid do the same three jobs -- richness, binding and sharpness -- in a dressing you make in the bowl, and English mustard is a genuine emulsifier so it holds together rather than separating.

  • sliced bread → long-life tortilla wraps

Bread does not keep. Ambient tortillas keep for months unopened, roll rather than crush in a pack, and go stale rather than unsafe once opened.
