Custard and fruit cocktail pudding

How long it keeps

About 4 months, set by Digestive biscuits.

Indicative, for planning a build before you buy. The answer for a pack you already own is the best before date printed on it, and that only holds if it has been stored as the label says.

Ingredients

A trifle without the jelly, the sponge, the cream or the fridge, which leaves three tins and a packet of biscuits. It is better than that description.

  1. Digestives broken into large pieces, not crumbs, into the bottom of bowls or mugs.
  2. Fruit cocktail drained properly, and a spoon of its juice poured over the biscuits to soften them slightly. Not more, or they dissolve.
  3. Fruit over the biscuits.
  4. Custard poured over that.
  5. Cinnamon and flaked almonds on top.

Assemble it at the table rather than in advance. The biscuit layer has about ten minutes of structural integrity and the contrast between crisp and soft is the only texture in the dish.

Nothing here is cooked and nothing needs heat, which makes this the pudding for an evening when the gas has run out.
