Biscuit and jam pan pudding

How long it keeps

About 4 months, set by Digestive biscuits.

Indicative, for planning a build before you buy. The answer for a pack you already own is the best before date printed on it, and that only holds if it has been stored as the label says.

Ingredients

A pan version of a crumble. Whether the biscuit base holds or simply goes to paste is the open question.

  1. Almonds toasted dry, two minutes, out. Set aside with a third of the biscuits crushed coarsely.
  2. Crush the remaining biscuits to rubble. Oil in the pan on a low heat, crumbs in, three minutes stirring until they darken and smell toasted.
  3. Jam and evaporated milk stirred in with the cinnamon. Low heat, three or four minutes, until it thickens to a soft spoonable mess.
  4. Reserved crumbs and almonds over the top, off the heat.

Keep the heat low throughout. Evaporated milk and jam are both mostly sugar and will catch and turn bitter over a fierce flame.
