Sprouting seeds: fresh greens from a jar, and the catch

Sprouting is genuinely one of the best ideas in this whole subject. Dry seed weighs nothing, keeps for years, needs no refrigeration, and turns into fresh green vegetables in a jar in three or four days using nothing but water. For anyone eating out of a cupboard or a van for a fortnight, it is the most plausible route to something crunchy and alive on the plate.

It also has a real problem, and it is not a fussy one.

Why sprouting is different from growing

The conditions that make a seed sprout are, exactly and unavoidably, the conditions that make bacteria multiply. Per the FDA:

Warm, wet, dark, nutrient-rich, several days. If you set out to design an incubator you would build a sprouting jar.

The crucial part — and the reason this is not solved by being careful — is where the bacteria come from:

If just a few harmful bacteria are present in or on the seed, the bacteria can grow to high levels during sprouting, even if you are growing your own sprouts under sanitary conditions at home.

Even under sanitary conditions at home. The contamination arrives on the seed, from the field it grew in, before you ever see it. Your clean jar, your clean hands and your rinsed water do not address it, because the problem is inside the thing you started with — and then you give it four days at room temperature to multiply.

This is not theoretical. The FSA introduced its sprouted-seed controls after the 2011 E. coli O104:H4 outbreak in Germany and France, where imported fenugreek seeds intended for sprouting were identified as the likely source. That outbreak killed dozens of people.

What this means in practice

Rinsing does not fix it. Rinsing is part of sprouting — it is how you keep the jar from going sour — but it is a hygiene step, not a kill step. It washes the outside of a seed whose interior may already carry the organism.

Cooking does fix it. Heat kills Salmonella and E. coli, and this is the straightforward answer. Sprouts stirred into a hot pan at the end, wilted into a noodle broth, or added to a stir-fry are a different proposition from sprouts eaten raw out of the jar. You lose some crunch. You do not lose the point of having grown them.

Some people should not eat them raw at all. The FDA:

People who are more vulnerable to foodborne illness… should avoid eating raw or lightly cooked sprouts of any kind (including onion, alfalfa, clover, radish, and mung bean sprouts)

That is children, older people, pregnant women and anyone whose immune system is compromised. Note “or lightly cooked” — a brief toss through a warm pan is not cooking for this purpose.

Note the list is all sprouts. Not just beansprouts, not just alfalfa. This is a property of sprouting rather than of a particular seed.

The judgement, honestly

We are not going to tell you not to sprout. It is a good technique, the risk is real but not large, and plenty of people eat raw sprouts their whole lives without incident. But the decision should be made with the actual facts rather than the assumption that home-grown means clean, because that assumption is the specific thing the guidance contradicts.

If you sprout on the road:

  • Buy seed sold for sprouting, from a supplier who is selling it for that purpose, rather than sprouting whatever dried pulses you have. Seed intended for sprouting is subject to controls that animal feed and general dried goods are not.
  • Cook them if you can. This removes the problem rather than managing it, and it costs you very little.
  • Do not serve them raw to anyone in the vulnerable groups above, which includes deciding on behalf of children rather than letting them choose.
  • Keep the jar out of the warm as far as you can. It does not eliminate anything — the seed is the source — but less time in the heat is less multiplication.
  • Throw away a jar that smells wrong, looks slimy, or has not got going. A sprouting jar that has gone over is obvious, and unlike some hazards on this site, here your senses are actually some use.

Where this sits

Sprouting is the one thing on this site that manufactures fresh food rather than storing it, which is why it is worth the trouble at all. Dried pulses, grains and tins do not go off in any way you need to think about for months. A sprouting jar is a live process running at room temperature in your kitchen, and it deserves the attention you would give any other live process.

Treat it as cooking, not as storage.
